Churros

Now how or why did I end up frying Churros in my kitchen....?

It all started when I ended up watching a new cable TV show, which had recently become one of my favourite channels (alongside Universal & WarnerTV) : )) It showcases all the different snacks available in the US from sweet treats to what-have-you under the sun.

In one of the episodes, Churros came up. And I suddenly remembered that I've kept this recipe for a while without having tried it yet, although it is an easy recipe.

So here it is. Coincidentally a friend asked for the recipe too, when I uploaded a picture of it in my FB.


Churros

1 cup plain flour
1/4 tsp baking powder
1/8 tsp salt
2 tsp caster sugar
1 cup water
1 tblsp vegetable oil (I use canola)

Enough cooking oil for frying
Caster sugar or Cinnamon sugar for tossing fried Churros


1) Sift flour, baking powder & salt into a mixing bowl. Add the caster sugar.

2) In a heavy-based pan boil water & vegetable oil.

3) Once the liquid is boiling pour in the flour mixture into the pan & mix vigorously with a wooden spoon until the mixture comes together into a ball. The dough should leave the sides of the pan.

4) Let dough cool for a while before transferring it into a piping bag or a cookie press.

5) Heat oil in the frying pan. Press the dough into the frying pan & cut according to your desired length. ( Another way to do this is to pipe the dough in spiral motion. You can cut them in the desired length after you remove from the pan & drain it).

6) Fry until golden brown & remove from pan. Drain.

7) Toss them in caster sugar or cinnamon sugar & serve hot.

P.S: Alternatively you may like to melt some chocolates & dip the churros for serving.

Spicy Potato Salad

I have completely forgotten to post this recipe, as I was busy trying to figure out whether this recipe is better with or without chillies.

Since I like spicy food, I have to add chillies into the original recipe. (you can always opt the chillies out & eat the potatoes with chilli sauce).




The recipe is quite similar to my Potato & Egg Salad, but this one is without any dip. Plus I'm using blended ingredients & method of cooking is frying instead.


Pre-requisite:
Boiled potatoes (cut into cubes)
Seasoned minced meat (fried with a bit of ginger, garlic & curry powder)

Blended ingredients: (Blended to become a paste for frying)
Onions
Garlic
Ginger
Dried shrimps (not paste)

Chopped red chillies
Chopped celery
2 eggs (beaten)

Oil for frying
Salt to taste

Directions:

1) Heat (about a quarter cup) oil. Fry blended paste until fragrant. Add a little bit of water if necessary.

2) Once fragrant, add in the chopped red chillies & celery & continue to fry until paste becomes a bit dry.

3) Add in cubed potatoes & mix paste & potatoes thoroughly.

4) Beat eggs & let it sit in the pan for a while before mixing the potatoes again.

5) Add in the minced meat & salt to taste.

6) Serve hot.

Potato & Egg Salad

Made potato & egg salad for dinner on Tuesday. It's simply boiling some potatoes & eggs and 'dump' everything in a bowl and toss. In this case, I arranged them in layers.

I especially love the dressing / dip. It's tangy sweet, sour, mustardy all into one. And I'm always putting in extra, fresh coriander leaves as I luuurrrrve the smell of it.



Potato & Egg SaladIdaho or Russet potatoes (boiled)
Eggs
Onions
Celery
Turkey bacon strips (I didn't use these in the salad, but it would make a great addition)

Dressing / Dip

1/2 cup mayonnaise
Lemon juice from 1/2 lemon
6 sweet gherkins (finely chopped)
1 tsp Dijon mustard
2 sprigs coriander leaves (finely chopped)
Sugar
Salt & ground white pepper to taste

For dinner

Fried some shrimps in egg (udang geragau) & had them with rice & (cockles) sambal. Yummy! Haven't had these shrimps for ages and mmmm.... You can also dip them in chilli sauce.

To make these:
Mix the shrimps with a little salt, chopped onions, chopped chillies, 1 egg & a little rice flour. Easy!
